I have to share these with you tonight because tomorrow I start my 30 Day Shred. Ugghhhh, wish me well. I’ve had a pretty stressful year and have put on a few several too many pounds recently. So now, they’re comin’ off!!
Anyway, I needed to blow it big time before I start this shred and this was the treat of choice.
Peanut Butter Cupcakes with chocolate frosting are the perfect dessert and they are really simple, different, and delicious!
Here’s how you make ’em:
1 package of yellow cake mix
3/4 cup of creamy peanut butter
1 1/4 cup of water
1/4 cup oil
Combine all the ingredients in a bowl and mix on low speed for 30 seconds, then on medium for 2 minutes more.
Fill cupcake papers 2/3 of the way full with batter.
Bake in preheated 350 degree oven for 18-22 minutes.
Let cool thoroughly before frosting with your favorite icing. I just used a store-bought chocolate…They were WONDERFUL. A little too wonderful, if you know what I mean!!
