When I was growing up, my mom would always make me peanut butter and banana sandwiches. My kids and I enjoy them still today. So when my stockpile of frozen, over-ripe bananas was overflowing I decided to try to recreate that peanut butter and banana experience in a pancake.
Here’s the recipe:
1 cup flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons oil
1/2 teaspoon vanilla
2 ripe bananas, mashed
Combine dry ingredients. In a separate bowl, mix the egg, oil, vanilla, and bananas thoroughly. Stir in the dry ingredients and combine well.
Cook pancakes on a lightly greased griddle until golden brown on each side.
Remove from griddle and spread peanut butter on pancakes. Serve warm with syrup and sliced bananas.
These are a special treat for breakfast or even supper. They are fabulous with the peanut butter but even without they are still really good.
