I love the combination of sweet and salty. Crackers, cheese, and jam are one of my favorites. I also like candy corn mixed with peanuts. YUM YUM! Today I was craving a sweet and salty mix and pulled out this recipe. It is from the Miserly Meals cookbook by Jonni McCoy. I doubled this recipe and added some extra popcorn too and it turned out to be delicious!!
3/4 cup sugar
1/2 cup brown sugar
1/2 cup water
1/2 cup butter
1/2 cup light corn syrup
1/2 tsp. salt
1/2 tsp. vanilla
6 cups popped popcorn (unbuttered)**I used microwave butter popcorn)
1/2 cup nuts (almonds or peanuts are best)**I used peanuts…mmm, mmm good!
In a large saucepan, combine the sugars, water, butter, corn syrup, and salt. Heat to boiling while covered; continue boiling (watch that it doesn’t bubble over) for 5-10 minutes or until the syrup reaches 275 degrees on a candy thermometer. Remove from heat and add the vanilla.
Distribute the popcorn over a large nonstick cookie sheet. Drizzle the syrup over the popcorn as evenly as possible. Stir to mix it. Bake at 350 degrees for 5 minutes or until the syrup is bubbling. Remove from oven, sprinkle the nuts over the popcorn, and stir again. Let candy cool and harden. Break into pieces, and store in an airtight container.
