Birthday Cakes – Layered Icecream Cake

This is the last of my kids birthday cakes.  Two of the four kids chose this icecream cake for their birthday.  It is beyond easy and super delicious.  I first saw this cake made by the Duggars.  Theirs looked a little different but we have adjusted it to fit our family and I think it looks great too.  Happy Birthday Colton and Kiersten.

All you need for this cake is 12 icecream sandwiches (use your favorite flavor…we have mixed it up and tried many concoctions),  8 oz. whipped topping, and your favorite candy or cookie.

First you crush up the candy or cookies.  Then just begin layering.  Start with four icecream sandwiches then spread whipped topping and sprinkle the cookies or candy on top.

Then just add another layer. The same as the first.

And finally a third.  This is the finished product.  I pop mine back into the freezer until I’m ready to serve it.

Then just cut and serve.
Isn’t it so pretty once it is cut?
It looks so fancy and yet it is super easy!!

    Thanks Melissa. I’m so excited you are going to homeschool next year. I LOVE homeschooling. I wouldn’t trade it for the world. My kids were in school for two years and I really can’t say much bad about it, it just wasn’t for us. Best Wishes.     I haven’t made one of those for a looong time. We just drizzled ours with chocolate syrup— the butterfinger bits would be very tasty! Found you @ Tip Junkie.

    what do you cover this with when you put it back in the freezer? does foil take the toppings off?

    Kristen, I usually stick it in the freezer for an hour or so without anything on it to get it to freeze and then if we are not eating for a while, I will then cover with foil.
