Making Green Beans a Meal

One of my favorite things is to go out early in the morning (ok, “early” is relative…wink, wink) and pick fresh veggies from the garden.  This morning I was out in the garden enjoying the warmth and sunshine, and loving every minute of it.

, Saving 4 Six

Tis the season for green beans at my house.  I swear I needed to start picking again because of all the growth that took place by the time I had gotten through the rows!  Don’t get me wrong.  I’m really thankful for extras that can be frozen for the long Ohio winter.  But on days like this, there is nothing like a pot of fresh green beans for dinner.  I like to make my beans the meal and I do that by simply adding a meat and potato…right to the same pot.

, Saving 4 Six

This is what I use…
1/2 kettle of cleaned green beans
1 lb smoked sausage or kielbasa (cubed)
6 medium potatoes (cubed)
salt to taste

, Saving 4 Six

I throw all this in the pot and cover with water.

, Saving 4 Six

Then I cook covered on medium heat for about an hour.

 That’s it!  It’s simple, delicious, and all in one pot!

    That looks sooo good, I hope you were able to use the coupon for the turkey sausage. I had never tried it before, but decided to try it when it went on sale. Pleasantly surprised. Also, LOVE the pot!

    As an Ohio gal too I’ve made this many times. I’ve used ham also but the kielbasa has more flavor. Thanks for sharing!

    That looks awesome! I would never have thought to mix the green beans with Kielbasa…bacon maybe. I look forward to trying this out! Although I might have to use some Italian sausage on hand since I’m trying to stick to my budget this week.

    That looks wonderful. I sometimes crave a big plate of green beans. I often think I could make a meal out of them. Now, I have an excuse to do just that. Yum!

    I thought this was my exclusive recipe. Its one of my favorites, only difference i get my beans from the market. Hubby likes them made with bacon, i usually just use whats on hand, and i add alittle butter too. Thanks for sharing……….stop by for a visit if ya get a chance……Bonnie

    This just made me remember how much I love fresh green beans! I will be picking some up and planting my own next year! So simple and so delish, I always add smoked sausage & potatoes to green beans and toss them in foil packets on the grill, but now I need fresh beans! 🙂 I hopped over from Polly want a Crafter and I'll be back!     Yum! I grew up in a Polish neighborhood in Philly and the bitties always made this, but with ham instead of kielbasa.

    Sounds yummy and easy! We have tons of green beans right now too. I also do something similar except we add diced tomatoes and saute more than cook.

    I love this! Someone gave us (my hubby & I) 8-10 jars of home-canned greenbeans that i've been using as a side dish with some of our meals. Never thought about using them as the main coarse! LOVE IT!

    Yep, that is an excellent idea and I happen to have a mound of my own green beans, some potatoes from the farmers market and some sausage in the freezer. Brilliant!!

    Yum! I love fresh green beans! That's definitely something I miss living in an apartment (a garden). Next summer I plan to do a lot of container gardening. I have fresh herbs inside and I love that!
