Ok, I know I’ve started several posts like this but…My Mom makes the best…Chicken Alfredo Lasagna.
This is my favorite meal in the world! Although it is not a “save on your grocery bill” recipe because of all the delicious ingredients it requires, it is a “save on your going out to the Olive Garden” recipe. This recipe is better than ANYTHING you will eat at the Olive Garden. (I know…it’s an excuse to splurge on a really YUMMY meal)
While visiting my mom, we made it together. We made extra so I had it for three days straight! It is THAT good. She doesn’t remember where she got the recipe, so if she got it from you, I will gladly give you credit. Frankly, I’d like to hug you because I think you are a genius and an AMAZING meal creator.
Ok, anywhooo, you want the recipe.
Here goes:
Sauce:
3 tablespoons butter
1 medium chopped onion
1 tablespoon of minced garlic
1 can cream of chicken soup (10 ounce)
1 jar Alfredo sauce (10 ounce)
1 can sliced mushrooms (6 ounce)
1/3 cup of apple juice
1 teaspoon basil
In a skillet melt butter over medium heat. Add in onion and saute for about 5 minutes, adding in the garlic the last two minutes. Stir in the cream of chicken soup, alfredo sauce, mushroom, apple juice, and basil. Simmer over low heat for about 15-20 minutes. Set aside 1 cup of sauce for the top of the noodles.
Filling
1 package thawed spinach (squeeze out the juice)
1 cup cottage cheese
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 large egg (beaten)
In a bowl, mix together the drained, chopped spinach, cottage cheese, ricotta cheese, parmesan cheese, egg, and mozzarella cheese.
You will also need:
9 lasagna noodles, cooked
4 cups cooked chicken (cubed)
3 cups shredded cheddar cheese
Place 3 cooked lasagna noodles in the bottom of sprayed 9×13 baking dish. Layer with half of the alfredo sauce, half of the chicken, half of the spinach mixture, and 1cup of cheddar cheese.
Place three noodles on top of the cheddar cheese and repeat like the previous layer. Top with the three remaining lasagna noodles and the cup of alfredo sauce you set aside earlier. Cover and bake at 350 degrees for about 45 minutes. After 45 minutes uncover and sprinkle 1 cup of cheddar cheese on top and bake until the cheese melts.

This does look good! I’ve never made my own alfredo sauce. I make a cheater version of alfredo lasagna, and we throw a little bit of pepperoni in just for kicks. I’m going to keep this recipe and try it.:)

One question…in the ingredients you don’t mention alfredo sauce, but in the directions you say to mix cream of chicken soup, mushrooms, apple juice, basil AND alfredo sauce. Do you need a jar of alfredo sauce? Can’t wait to try it!

Sorry Anonymous 🙂 Yes, there is a 10 ounce jar of Alfredo sauce (just below cream of chicken soup). You know how many times a checked to make sure I didn’t miss anything??!! And then to miss one of the most important ingredients!? I think I’m losing my mind. Thanks for pointing it out so I could fix it!!!
