I’m always on the look out for a quick dinner idea and on this day, I had to look no further than my pantry. I had all these ingredients on hand and threw this dish together in less than 20 minutes. The best part about it was that it was a BIG hit with the family and so it’s turned into a quick, easy meal that shows up on my meal plan regularly!
Here’s what you need:
pasta (I use Rotini but whatever you like or have on hand)
pasta sauce
Mozzarella cheese
pepperoni
grated Parmesan (if desired)
Cook and drain pasta. To feed my family, I cook about 21 oz. of pasta (a box and a half of the whole wheat kind)
Pour a jar of your favorite pasta sauce over the pasta. Add 3 oz. sliced pepperoni and 1 1/2 cups Mozzarella cheese and stir well.
Top with grated Parmesan (if you like) and serve immediately.

I served up something very similar last night, as I pulled together items I had on hand in pantry and freezer. When they asked what it’s called I said ” Um,,, Pasta Bake, yeah! that’s it! Pasta Bake.” Next time I’ll add pepperoni and call it Pizza Pasta, they’ll like it even more. Thanks for the inspiration!

I’ve made something very close to this called “Pepperoni Pizza Pasta”. I use a jar of pizza sauce and add black olives. The original recepie called for anything you like on a pizza. Then I bake it for 20 minutes to get the cheese melty. Great dinner that everyone enjoys.
