So last week was a busy week at our house. We did our yearly back to school…CLEANING. Yes, instead of back to school shopping, we do back to school cleaning. Because we homeschool, I like to seriously clean right before the school year starts, knowing that it may not get really clean again until after the school year is over. Anywhoo, my kiddos had worked hard all day and when they came to the bottom of the “to-do” list, they were thrilled to see, “Make Caramel Marshmallow Popcorn”. That was one task that I heard absolutely no grumbling to get done.
I found this recipe over at Chef In Training and made just a couple changes to her recipe. Instead of using store bought microwave popcorn like the original recipe calls for, I made my own brown bag microwave popcorn. You can find that simple recipe here.
Anyway, here’s how I made the Caramel Marshmallow Popcorn:

2 batches of homemade microwave popcorn
1/2 cup butter or margarine
1 cup brown sugar
2 Tbsp. light corn syrup
1/2 tsp. vanilla
12 large marshmallows
Directions:
Pop popcorn. Remove any unpopped kernels. Pour in large bowl and set aside.
In medium saucepan, melt butter over low heat. Raise temperature to medium heat and add brown sugar, corn syrup, vanilla, and marshmallows. Stir until marshmallows are melted and mixture is smooth.
Pour over popcorn and stir thoroughly. Let cool on wax-paper covered surface.
I would tell you to store it in an airtight container, but if you are anything like us…you won’t need to. It will be gone before you have time to put any away!
This popcorn is ooey, gooey, sticky, and oh so good!!

Wow, these look good. My Grandmother used to make Caramel Popcorn Balls for us every Halloween, I haven't had them for years. Thinking I might have to some of your Caramel Marshmallow Popcorn.
