Creamy White Chicken Chili

I’m hoping the really cold days are behind us and am looking forward to the salads, grilling, and fresh foods of Spring and Summer.  I do however have one last good Winter recipe for you, that you should try right away or pin for later.  It’s a good one that you don’t want to miss.

Creamy White Chicken Chili

Serves: 6
 
Ingredients
  • 1 TBSP oil
  • 1 large onion (chopped)
  • 4 oz. can chilies
  • 1 TBSP minced garlic
  • 2 lbs chicken breast (cubed)
  • 3 cans great northern beans (drained and rinsed)
  • 32 oz. chicken broth
  • 2 tsp. salt
  • 2 tsp. cumin
  • 2 tsp. oregano
  • ½ tsp. black pepper
  • ½ tsp. cayenne pepper
  • 16 oz. sour cream
  • 1 cup heavy cream
Instructions
  1. In large pot, saute onions, chilies, garlic, and chicken in oil until chicken is cooked through.
  2. Add beans, chicken broth, and spices and simmer for 30 minutes.
  3. Just before serving, add heavy cream and sour cream, and stir until combined.

This chili is so creamy, flavorful, and has a small kick.  I have added this to my Cooking for a Month list of recipes and have several batches of this stored in my freezer now.
