Vacation with my extended family is one of my favorite Summer happenings. A few weeks ago there were 18 of us in one house. When we’re together we take turns making dinner for the gang. One of the meals I planned to make was BBQ chicken pizza, so I had cooked, shredded, seasoned, and froze 5lbs of chicken, before I left on vacation. Well, I didn’t get a chance to make the pizza I had planned so I came home with that same 5lbs of chicken. With all the big eaters in my home I knew I wouldn’t have any problems getting it eaten, I just wasn’t sure what I was going to use it for.
I LOVE when my mom makes BBQ pork sandwiches and so I figured this chicken would be a great that way too. I was right!
I cooked the chicken in my crockpot. Then I shredded the chicken like I do with my mixer. If you haven’t tried this before, it is a must. You can see how to do it here.
Then I used my mom’s recipe for the BBQ sauce. Her recipe is very good but I usually do have to add a little extra store bought sauce to get the bold flavor that I like.
I served the BBQ chicken on garlic toast which added an extra yumminess to the sandwich.
This made a delicious dinner and is one of those meals you can make up way ahead of time and have on hand for a picnic, unexpected guests, or just a quick supper.
