Making Lunches Easier

Since I homeschool, I’ve never really had to pack daily lunches.  My kiddos make mac and cheese, ramen noodles, quesadillas, or  a sandwich for themselves each day at lunch time.  But I know many of you are packing a lunch each day for your kids that head off to school or day care.

I was chatting with a friend the other day and she was telling me about the craziness of her evenings and one of the things that made it crazy was trying to make her son’s PB&J each day.  It may sound simple to some of you, but to others you will completely understand that life is CRAZY busy and that sometimes the daily making of a PB&J sandwich needs to be easier!

So, I had an idea and decided to test it out.  Why not make a week or two worth of sandwiches up on the weekend and freeze them?

I tested my theory by making up a sandwich, freezing it in a sandwich bag and then putting it in a freezer bag just to be safe.  I took it out of the freezer several days later, let it thaw for an hour and ate it.  IT TASTED LIKE I JUST MADE IT!  VOILA!  The daily sandwich making task has now become a thing of the past.

I whipped together a bunch of these sandwiches, threw them in the freezer and gave them to my friend the next time I saw her.

This will help her crazy busy evenings be more manageable and it gave me the great idea to do this at home.  We often run out the door quickly and end up stopping to grab fast food.  If I had some sandwiches in the freezer, ready to go, they could be pulled out on the run.  Not that PB&J is the healthiest of meals, but it’s better than a burger and fries!

So whether you’re a daily lunch packin’ Mama or a just a busy one on the go, when you’re making one PB&J, throw together a few extras and pop ’em in the freezer.  You’ll be glad you did!!
