Baked Pumpkin Spice Donut Holes

It’s a good thing that fall has some beautiful, colorful sights and some delicious, tasty treats or I think I might boycott it.  I miss SUMMER!! My phone literally asked me this summer if the pool was my place of employment, and rightfully so…the kiddos and I spent so much time there and made many great memories, I’m missing it.  YES, I do love to cover up with a fluffy blanket and hide all my bumps and bulges with a nice sweater, and the boots…I DO love to wear my jeggings and boots!  I did try a new pumpkin spice creamer in my coffee and I enjoyed it very much and yes, the whole candy corn thing…I can’t even really talk about that…and then there is this awesome new BAKED Pumpkin Spice Donut Hole recipe I just tried, ok so maybe I’ll enjoy fall a bit more than I expected.

Anywhoo, my initial thought when I say this recipe was “Oh, BAKED, that will make them dry chewy  healthy.”  But then, I read the recipe and realized that although the healthy card was going to have to be thrown out, the scrumptious card was very much in play.

Now, the really cool thing about these donut holes is that they are baked in mini muffin pans, so you may be thinking they are just like mini muffins…

Oh, dear friend…they are NOT muffins.  They taste very much like a donut hole.  A delectable, moist, sweet morsel of goodness.

The recipe called for these to be rolled in cinnamon and sugar which became the favorite of several of my kiddos.

However, the others really liked them with a simple glaze drizzled over them.
