Tomorrow is our Senior Citizen Luncheon at church. The younger ladies and kids in the church prepare a turkey dinner with all the fixings and come together to serve the Thanksgiving lunch to older people in our church and the friends they bring. This is one of my favorite activities of the year!
The people we serve are thankful and appreciate this gesture of love so much, but we who are serving are blessed so much more by their response. It’s a great day that I look forward to all year long.
For tomorrow, I’m making the sweet potatoes. We are expecting 50 people so I whipped up three Sweet Potato Casseroles. This recipe comes from my mom and is my absolute favorite.
I just added the crunch topping to the casseroles and popped them back in the oven to get nice and crispy on top so my house smells heavenly at this very moment!!
Ok, so I’m telling you all of this because next week is Thanksgiving and most of you will be serving some sort of sweet potato, so I plead with you…Don’t go opening that can o’ yams and keep your marshmallows in the cabinet. THIS is the recipe you want!!! These are the sweet potatoes that you will eat during dinner, as a midnight snack, and I kid you not…for breakfast (COLD) the next morning. The are THAT good!!
