Instant Pot Baked Potatoes

It’s been in the 90’s here at my house this week.  It’s kinda crazy because the last couple weeks of August felt like fall and now the first few days of fall feel like the dog days of summer!!  Well, these hot days have encouraged me to use my even more than I usually do.  I still absolutely LOVE my Instant Pot. If you’re undecided, I encourage you to read my post on the 5 Things I Love About My Instant Pot.  It might help you make up your mind.  Anyway, the other night I had grilled chicken breast and baked potatoes on the menu.  It was too hot to turn on the oven and my microwave is acting kinda weird so I decided to make the potatoes in the instant pot and guess what?…It’s my new favorite way!! Big surprise, right??

A baked potato is always a great side dish or my Baked Potato Bar is good for a family or a group affair.  So, here’s how I made the baked potatoes in the Instant Pot.

First, thoroughly wash the potatoes and then poked several holes in them with a fork.

I placed them in the Instant Pot on the trivet and poured in 1 cup of water.

Now, the cooking time depends on the size of the potatoes and I considered my potatoes to be medium sized so I closed the Instant Pot lid and cooked on high pressure for 14 minutes.  If you have large potatoes I would recommend cooking them for 18 minutes and small potatoes for 10 minutes.  I let the valve naturally release for 10 minutes and then released it the rest of the way.

The potatoes came out perfectly and were a great side dish.

I know I don’t need to tell you again but I’m going too, the Instant Pot is a great tool.  It saves me a bunch of time in the kitchen and keeps me from ordering pizza so often and with as quick as these were, we’ll definitely be eating more baked potatoes.

    I bought an Instant Pot that I have yet to use ( 2 months) . I appreciate this simple post of how to use it. I am intimidated and don’t want to take the time to learn it.. OK baked potatoes will be my first try. We are having company and I will need to make 8 baked potatoes-
