Make Ahead Freezer Mashed Potatoes

This recipe will fill two foil lasagna pans and serve a alot!
  • 10 pounds potatoes
  • 1 cup sour cream
  • 8 oz cream cheese
  • 6 tablespoons butter
  • warm milk
  • salt and pepper
  1. Peel and cube potatoes.
  2. Boil in salted water until soft.
  3. Drain.
  4. Combine potatoes, sour cream, cream cheese, butter, and salt and pepper.
  5. Mash with electric mixer or by hand.
  6. Add warm milk until you get desired consistency.
  7. Serve immediately or place in foil freezer pan and cover thoroughly.
  8. Freeze.
  9. When ready to serve, thaw completely.
  10. Bake covered at 350 for 25 minutes, then uncover and bake 20 minutes more, or until potatoes are hot throughout.
  11. Serve immediately.
