My Dad loves peanut butter and because he was visiting a couple weeks ago, I wanted to make something peanut buttery and delicious! I had pinned this recipe from All Recipes so I thought I would give it a try. It was WONDERFUL!

Cake
2 cups flour
2 cups sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup water
3/4 cup butter
1/2 cup peanut butter
1/4 cup canola oil
2 eggs
1/2 cup buttermilk
1 teaspoon vanilla
Icing
2/3 cup white sugar
1/3 cup evaporated milk
1 tablespoon butter
1/3 cup peanut butter
1/3 cup mini marshmallows
1/2 teaspoon vanilla
Preheat oven to 350. Grease jelly roll pan (cookie sheet).
In large bowl, mix together flour, sugar, baking soda, and salt. Combine water and 3/4 cup butter in sauce pan. Bring to a boil. Remove from heat and stir in 1/2 cup peanut butter and canola oil. Stir this mixture into the dry ingredients. Combine the eggs, buttermilk, and vanilla and stir into the peanut butter mixture until well blended. Spread into prepared pan.
Bake for 20 minutes or until toothpick inserted in the center comes out clean.
While the cake is baking, place 2/3 cup sugar, evaporated milk, and butter in saucepan. Bring to a boil, stirring constantly. After it starts boiling, cook for 2 minutes. Remove from heat and add marshmallows, peanut butter, and vanilla. Stir until marshmallows and peanut butter are melted and smooth.
Spread on warm cake. Cool before cutting.
