All these delicious fall recipes in blogland are making my waistline expand so I thought I’d pull out a recipe from my Weight Watcher’s days. This was one of those easy, delicious, and healthier recipes with a delicious fall flair.
All you need for this one is a spice cake mix, 15oz canned pumpkin, and 1/2 cup water.
By using the pumpkin and water, you can eliminate the oil and eggs that add quite a bit of unnecessary fat to this recipe.
Just combine all ingredients and divide into 18-24 cupcake papers. Bake according to directions on cake mix.
These are very moist and delicious and according to the weight watchers website, these only have 1 Point Plus.
I topped mine with a little whipped topping and cinnamon but they are very good without too!
