I love baked potatoes all covered in yummy goodness. You know the kind with melted butter, sour cream, bacon, cheese? Well, I love to eat them but hardly ever make them myself. They just seem to take too long or be too hard or something…I’m not really sure what it is. ANYhooo, I overheard someone saying that they make their baked potatoes in the crock pot and knew I wanted to hear more!
The process is simple. Wash your potatoes thoroughly and poke some holes in them with a fork. Wrap in foil and place in the crock pot. Cook on high for 3 to 4 hours or until potatoes are soft on the inside. I have cooked them this way with as few as six in the crock pot and as many as ten. It works perfectly every time.
I decided to turn my baked potatoes into a meal by making a Baked Potato Bar.
I included butter, salsa, salt and pepper, sour cream, and bacon. I’m sure you can think of some other toppings to add to the bar.
This is a great meal if you have running around to do or for after church. Just throw the potatoes in the crock pot and bake your bacon before you head out. This has become one of my kid’s favorites because they taste so good and one of my favorites because it’s so easy!

What a great idea! Baked potatoes would be a good addition to a leftover smorgasbord…leftover chili with cheese, or leftover chicken with ranch dressing and salad, leftover taco meat, fritos and cheese. Just pile whatever leftovers you want on your potato and turn it into a meal…yum!

We actaully had a baked potato bar at our wedding reception. Mom borrowed every crockpot and electric roaster from all of our friends. 🙂
